Prepare and arrange ingredients before you begin
In very warm water, soften one piece of rice paper at a time by holding the paper in the water for at least 1 minute.
Carefully lay the paper on a flat surface and load the ingredients as shown, more toward the bottom of the paper.
Tuck the ingredients into the paper, bottom first. Then fold each side over. Carefully roll the paper up. Place, seam side down, on waxed paper, making sure the rolls do not touch.
Store up to a day in advance in the refrigerator, covered with a damp paper towel to keep them moist. Serve with sweet chili sauce or soy sauce.
